Zucchini Muffins

Not sure what to do with all your fresh garden zucchini? You will find these muffins are more moist than banana nut bread.

Ingredients
2 cups shredded zucchini
3 eggs
1 cup oil
1 2/3 cups granulated sugar
1/3 cup brown sugar
3 cups sifted flour
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1 tsp vanilla
1/4 cup flax seed (optional)
1/2 cup chopped walnuts or almonds

Bake @325° for 20 minute
