Country Breakfast Part 1: Spinach and Mushroom Omelet

Brunch is a magical time, where we combine 2 meals into one, mixing salty, sweet and savory. It also means we get to eat twice as much right? I have broken down 3 components to my favorite brunch meal. An Omelet with skillet potatoes and biscuits with gravy. Get better than restaurant brunch right at home for a fraction of the cost. Around here going out to brunch costs around $20 per person, this meal is closer to $2.

Part 1 – the perfect flip Spinach and Mushroom Omelet

Ingredients
3 eggs
soy milk
spinach
mushroom
green onion

Falafel

Falafel’s are packed with flavor and protein. They can be made ahead of time and keep well in the freezer. Since 1 can of garbanzo beans can yield about 20 falafel, this recipe will keep you stocked for weeks. PLEASE NOTE: this recipe is for canned beans only. Traditional falafel use dry garbanzo beans which you soak over night. But if you don’t have time, or you have cans of garbanzo beans, this recipe will work well. These falafel will be a little softer on the inside and more moist then if using the dry beans. Enjoy!


Ingredients
1 can garbanzo beans
1 small onion
2 cloves garlic
1 cup fresh parsley (or cilantro)
2½ cups bread crumbs
3 tbsp flour
½ tsp baking powder
1 tsp coriander
1 tsp cumin
1 tsp paprika (or other pepper)
pinch of salt

Spritz & Thumbprint cookies

New Year new cookie recipe. Spritz cookies are machine molded and pressed cookies that turn the average baker into a professional artist. We have also found the same dough for the Spritz cookies, tastes delicious with jams, so we decided to use it for thumbprints as well. It will take a little practice using your Spritz gun; try counting to 3 between each cookie until you get a rhythm going.

Another great thing about this dough, it’s very simple. Try adding peanut butter, coconut, chocolate, food coloring… the possibilities are endless.


Ingredients
1 cup butter or margarine
1/2 cup sugar
1 egg
1/2 teaspoon of vanilla
2 1/2 c flour
pinch of salt

Grandma’s Biscotti Recipe

Every year my grandma made delicious Italian Biscotti. Luckily on one of her last years making cookies, I was able to film her as she taught me her tricks. Biscotti are hard Italian cookies, that are not very sweet. They pair nicely with hot coffee or surprisingly a glass of red wine.

Ingredients:
1/2 cup of butter
1 cup of sugar
3 eggs
3 cups of flour
3tsp of baking powder
1/2tsp salt
1 tsp vanilla
1tsp lemon zest
1tbsp chopped almonds/walnuts
1tsp anise seeds soaked in amaretto

Old Fashioned (drink)

Paul the bartender stops by for a quick tutorial on how to make an old fashion. Impress your party guests with this sophisticated looking, easy drink.

Ingredients:
1 sugar cube
2 dashes bitters
2 dashes orange bitters
2oz whisky rye or bourbon
ice

Pizelles

Pizelles are Italian, thin, wafer like, cookies. They are sweet and have a similar taste and texture to fortune cookies.

Ingredients:
6 eggs
3½c flour
1½c sugar
pinch of salt
¾c vegetable oil
4tsp baking powder
1tsp vanilla
1tsp anise seeds soaked in amaretto or red wine

Pizelle irons vary in temperatures, start on the lower setting (1-2) and increase if necessary (3-4).

Chocolate Crinkles

Chocolate Crinkles are like brownies crossed with cookies, a delicious, rich, chocolate cookie. My family always bakes these around the holidays.


Ingredients
1/2 cup vegetable oil
4 oz unsweetened chocolate
2 cups sugar
4 eggs
2 tsp vanilla
2 cups flour
2 tsp baking powder
pinch of salt
powdered sugar

Banana Sweet Rice

Banana sweet rice is a Thai dessert, featuring rice, banana and coconut milk steamed in a banana leaf. It can be eaten for breakfast or a sweet snack.

Pizza and Fried Korean Glaze

Korean Glaze Ingredients:
2 tsp sesame oil
2 tbsp soy sauce
3 tbsp mirin
2 tbsp apple cider vinegar
2 tbsp Gochujan
2 tbsp brown sugar
2-3 tbsp honey
1 tsp each minced garlic and ginger
Optional hot pepper

Wok Fried Green Beans

Less is more. This Thanksgiving, highlight the green beans, don’t hide them with cream and canned onion topping.
