If you have ever had a spring roll or a vermicelli salad, you may recall the thin, salty-sweet, sauce, that goes with it. Traditionally made of fish sauce, we have a vegan friendly version that tastes great.

Ingredients
1 cup Vegetarian Fish Sauce
1 Cup Brown Sugar
1 Lime
1 cup Tamarind Juice
2 cups water
2 cloves minced garlic
Minced Chili Peppers (your preference)

2 cups shredded zucchini
3 eggs
1 cup oil
1 2/3 cups granulated sugar
1/3 cup brown sugar
3 cups sifted flour
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1 tsp vanilla
1/4 cup flax seed (optional)
1/2 cup chopped walnuts or almonds

Bake @325° for 20 minute
