Falafel’s are packed with flavor and protein. They can be made ahead of time and keep well in the freezer. Since 1 can of garbanzo beans can yield about 20 falafel, this recipe will keep you stocked for weeks. PLEASE NOTE: this recipe is for canned beans only. Traditional falafel use dry garbanzo beans which you soak over night. But if you don’t have time, or you have cans of garbanzo beans, this recipe will work well. These falafel will be a little softer on the inside and more moist then if using the dry beans. Enjoy!

1 can garbanzo beans
1 small onion
2 cloves garlic
1 cup fresh parsley (or cilantro)
2½ cups bread crumbs
3 tbsp flour
½ tsp baking powder
1 tsp coriander
1 tsp cumin
1 tsp paprika (or other pepper)
pinch of salt
